Happy Sunday friends!
The winner of the Coconut Oil Giveaway is.. Monica! Who said, “I would use the TT Coconut Oil to make EVERYTHING. I would make Alyson’s Protein Quinoa Muffins, I’d use it to “fry” up broccoli slaw, I’d slather it on protein pancakes. Mmmmm, the possibilities are endless!”
Please send me your address Monica!
I’m not going to lie.. my eats were boring today. So sorry! I almost didn’t post due to the fact that I thought I’d bore you all to tears, but I know some of you still like to see my food.. so I’m posting anyway!
I also tried a slightly different meal plan today, since it was my rest day. I did my carbs early on in the day, and less carbs at night- the way I actually prefer to eat. Lately I’ve been having to pack on the carbs lately on training days to build muscle, even though my body naturally prefers protein and fat.
So, last night I slightly remember waking up hungry in the night, but I guess I fell back asleep. But this morning my hunger was gone.. so weird! This used to happen to mea lot.. does it happen to anyone else? Even though I wasn’t feeling hungry I knew I probably was so I made a nice bowl of oats this morning. I prefer oatbran to oats usually, except for when I make my Mock French Toast or have it in a smoothie. So, I went with oatbran today! It was the usual 50 grams of oatbran with 27 grams of Dymatize 12 Hour Protein Powder, cinnamon, and ginger. But I cooked it on the stove top today!

After breakfast digested a while I did an easy 30 minute walk on the treadmill (speed 3.0). Today’s my rest day but I felt like moving my legs!
My next meal involved more oats.. specifically Mock French Toast using 3/4 cup of egg whites instead of the whole cup:
240/20/22/3
And that held me about 1/2 an hour! Then my stomach started rumbling again. So I had some Protein Brownie Batter, minus the nut butter, with the addition of 1/2 tbsp Tropical Traditions coconut oil!

Lunch was about 2 hours after that. It was Salmon Sunday obviously! Today, I cooked up 2 cups of cabbage with some Braggs Aminos and cayenne pepper, then added my 3.5 oz salmon into it.
And lunch dessert was almost 3 oz of sweet potato with 1 tsp organic pb, cinnamon, and ginger:
250/23/19/8
My afternoon snack was a Double Chocolate Peppermint Protein Shake made with only 1 serving of protein powder, since it wasn’t post-workout. Plus 1/4 oz of sunflower seeds:
183/24/5/7
After snacking we headed up to meet my grandparents for a little bit. When I got back, I was hungry! That’s when a ton of baked chicken in your fridge comes in handy
So I threw about 3 cups of organic baby spinach with 4.5 oz baked chicken, and homemade guacamole (50 grams of avocado with cayenne pepper and homemade salsa):
260/28/2/10
And now it’s time for a big cottage cheese dessert! Sorry to run.. but I’ve got to get ready for tomorrow!
Bye!

oh miss April, your eats are never boring
and I definitely prefer oat bran to oats too — they’re so creamy and divine!

Hi April,
I really like your new layout. Looks good. Thanks for the rejected pancakes. They were delicious with my yogurt and I am going to eat the other pancake stuff now for lunch. XXXX I am a lucky mom, keep sending all your rejects my way. XXXX

I must make some of that protein brownie batter. Every time I make regular brownies I am always so tempted to eat more batter than actually cook them! This will at least be better for me.
