Pumpkin French Toast Sticks with PB Frosting

This is one of my all time favorite recipes. It’s a delicious breakfast but it also makes a great lunch or dinner too! ;)

French Toast Ingredients:

  • 2 slices of whole grain bread, cut into strips
  • 1/3 cup liquid egg whites (or two egg whites from real eggs)
  • 1/4 cup pumpkin
  • Cinnamon, vanilla

PB Frosting Ingredients:

  • 1 tbs PB
  • 1 tsp liquid sweetener of your choice (my favorite is sugar free maple syrup!)

Directions:

  1. Heat a skillet or griddle to medium high.
  2. Mix the egg whites, pumpkin, cinnamon, and vanilla in a bowl. Place half of the mixture into a separate bowl.
  3. Soak 3 bread strips in each bowl until saturated.
  4. Place on skillet for about 5 minutes, and then flip and cook for another 3 minutes, or until done.
  5. Meanwhile, place the peanut butter and the sweetener in a microwave-safe dish. Microwave on high for 15 seconds and give a stir.
  6. Spread on the french toast sticks (or dip them in it!)

  12. Oooh, that does look good. I was just cleaning out my pantry over the weekend and found 4 cans of pumpkin! I totally didn’t even know it was there!
