This is one of my all time favorite recipes. It’s a delicious breakfast but it also makes a great lunch or dinner too!

French Toast Ingredients:
- 2 slices of whole grain bread, cut into strips
- 1/3 cup liquid egg whites (or two egg whites from real eggs)
- 1/4 cup pumpkin
- Cinnamon, vanilla
PB Frosting Ingredients:
- 1 tbs PB
- 1 tsp liquid sweetener of your choice (my favorite is sugar free maple syrup!)
Directions:
- Heat a skillet or griddle to medium high.
- Mix the egg whites, pumpkin, cinnamon, and vanilla in a bowl. Place half of the mixture into a separate bowl.
- Soak 3 bread strips in each bowl until saturated.
- Place on skillet for about 5 minutes, and then flip and cook for another 3 minutes, or until done.
- Meanwhile, place the peanut butter and the sweetener in a microwave-safe dish. Microwave on high for 15 seconds and give a stir.
- Spread on the french toast sticks (or dip them in it!)

Oooh, that does look good. I was just cleaning out my pantry over the weekend and found 4 cans of pumpkin! I totally didn’t even know it was there!
