Low Carb Sweet Bread

Makes 1 loaf (8 slices)

Each slice 107 calories, 2.5 grams of carbs, and 7.5 grams of protein (with golden flaxseed)

With the dark flaxseed: 94 calories

For the higher protein version, each slice is 85 calories, 2.5 carbs, and 14 grams of protein


Ingredients:

  • 1 cup ground flaxseed
  • 1 cup wheat-bran
  • 1/4-1/2 cup pure pumpkin (depending how moist you like your bread- I like mine really moist so I used 1/2 cup)
  • 1 cup liquid egg substitute
  • 1/2 cup hot water
  • 1 tbsp each baking powder and cinnamon
  • 2 tsp pure stevia extract

Directions:

  1. Preheat oven to 375 degrees. Spray a loaf pan with nonstick baking spray.
  2. Combine all ingredients.
  3. Pour into baking pan, bake for about 30 minutes or until a toothpick inserted into the center comes out clean.

**For a higher protein version, use 1 cup of soy protein powder instead of flaxseed. You will need to bake this version about 45 minutes, or until a toothpick comes out clean.

    Unfortunetly stevia is about 1000 times sweeter than sugar so you’d need to use more like 1/2 a cup of sugar probably!

  4. I am totally digging guar and xanthun gum in my shakes….makes them into soft serve ice cream that you can eat with a spoon! YUM!

    I found your recipe from Katharina’s blog and I’m SO ready to try my hand at it. Just one quick question though – for your 1 cup of ground flaxseed did you take 1 cup of whole flaxseed and THEN mill it, or is it straight up 1 cup of flaxmeal? (Because if it is 1 cup of whole flaxseed, after it is ground up, it would be a smaller volume…)
