Protein Cakes

Thanks to reader Julia for the recipe!

Makes 1 @ 90 calories, 18 grams of protein, and 2 net carbs

Ingredients:

  • 15 grams of protein powder (half a scoop) (whey works best, but I use unflavored soy many times to save money-I buy it in bulk!)
  • 1 tbsp 100% cocoa powder
  • 1/4 tsp baking powder
  • 2 packets stevia (or whatever sweetneer you prefer)
  • 1 tbsp pumpkin or applesauce (your choice!)
  • 3 tbsp liquid egg whites (or 1 egg white)

Directions:

1. In a microwavable cup, place the protein powder, cocoa powder, baking powder, and stevia. Mix well.

2. Stir in the egg whites and pumpkin so that you end up with a thick batter.

3. Microwave for 1 minute. The result will look something like this:

4. Use a knife to gently loosen it from the mug. Place the mug upside down on a plate and let the cake come out.

5. Cut in half and fill with desired toppings- peanut butter, yogurt, cream cheese, laughing cow, etc!

6. Once they are cool, you can wrap them in saran wrap and take them on the go!

    im so totally going to try these! GREAT recipe..you know how we love our protein girl!! i had tilapia+bbq sauce AND a cottage cheese mixture with ham, broccoli, and ranch seasoning and TOTALLY thought of you!
    YES it was the bar you gave me-and i forgot that! and i LOVED it!! i had to go to the bathroom right after!! so good!

    ahh i wish i wasn’t so full from dinner or i would be making one of those pronto! how much of a scoop or measurement wise is 30 grams of protein? 1 scoop of mine is 120 calories

    This is one of the most perfect recipes for me. I don’t crave sweets too often. When I do, I wish I had chocolate cake or brownies. Which is not likely beacause I refuse to make them or buy them. But! a single/healthy serving of chocolate cake! :) YAY!

    I was skeptical about how this would taste but I made one of these last night. Oh my! They puff up perfectly like a muffin and the texture is nice…they taste very chocolaty too and it only took 2 minutes to make – thanks so much for this recipe!

    Just made a protein cake again tonight! This time it was carrot cake flavored. :) I used Cake Batter flavored Muscle Milk protein powder, omitted the cocoa powder, added 1 1/2 baby carrots finely chopped, a splash of vanilla and a shake of cinnamon. Oh, I also stirred in about 10 little raisins. It was very good!! I enjoyed it a lot, and I even spread a little bit of Greek yogurt on the halves to mimic cream cheese frosting. The cake didn’t puff up as well as my last one did and I’m not sure why, but it was still great!

    One question though: is the scrambled egg taste normal? It’s obviously coming from the egg white, but I’m just wondering if that’s the way it’s supposed to taste, or if I’m doing something wrong. Haha. Thanks! :)

  40. Just made one with egg whites, baking powder, Cake Batter protein, no cocoa and some peach’n'apple sauce. YUM I am all over this! This is just what I need to get through the first phase of P90X!!!

  41. I just made this with soy protein powder (EAS) and instead of egg whites I used a vegan egg replacer…eep these didn’t puff up! It was very flat and dense but still EXTREMELY tasty…do you think it’s the egg that makes it puff?
