No Carb Soy Muffins

No Carb Soy Muffins

Makes 9 muffins @ 70 calories, 5 grams of protein, and barely 1 net carb each!


Liquid Ingredients:

  • 1/2 cup liquid egg whites
  • 3/4 cup water
  • 1 tsp vanilla

Dry Ingredients:

  • 3/4 cup soy flour
  • 1/4 cup flaxmeal or ground flax seeds
  • 1/2 cup wheat bran
  • 1/2 cup Wholesome Sweeteners Organic Zero
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees. Spray a muffin tin with nonstick baking spray set aside.
  2. Mix liquid ingredients together, then mix in dry ingredients.
  3. Pour into muffin tins, bake for about 25 minutes or until a toothpick inserted into the center comes out clean.

    okay, I so want to try these BUT I am intolerant to wheat and soy. Any other flours you might suggest? I use almond meal and coconut flour at times but am looking for higher protein. Thoughts?

    Mmmm,April, I just made these (even though I’m on my blog break :) ) and they were faaaab (used a stevia baking blend instead though)!!! Only took about 10 minutes to make too!

  4. I want to make these! What is Wholesome Sweeteners Organic Zero? I assume a stevia of some sort? Hmmm…any ideas on what I can use instead if I can’t find it?

    It’s erythritol- a natural artificial sweetener. You could use the same amount of splenda!
