Updates and Eggs

So this morning was another early one for me. These early mornings are bringing back nursing memories big time! My early morning staples were always breakfast cookies or peanut butter wraps if I didn’t feel like getting up in the night time (I count 4:30 night time- which I woke up to 4 days a week the summer of 2008!). Anyway, today I made a more protein packed peanut butter wrap than the one I used to make. It contained:

  • 1 La Tortilla Factory 100% whole wheat tortilla
  • 1 tbsp + 1 tsp Naturally More peanut butter
  • 1/4 cup Daisy 2% cottage cheese (mixed with NuNaturals Vanilla Stevia)
  • 1 tsp Unsweetened Apple Butter
  • 1/4 banana
  • Cinnamon & Ginger!

And this morning while I was making my green tea and putting on my socks and shoes I plopped it on my panini press for a couple minutes to get it nice and warm:

It was delicious!

I finished my 50 question Psychology final in 15 minutes.. I always take tests really fast! If I don’t I’ll end up questioning my answers and usually my first instinct is always right so I try not to go back.

Mid-morning I made a nice big snack! Lately I’ve been making smaller snacks but they haven’t been satisfying me. So I just made a bigger portion today! I mixed together:

  • 1/2 cup Daisy 2% cottage cheese
  • 1/4 cup 0% Fage
  • 1/4 cup pure pumpkin
  • 1/4 cup puffed millet cereal
  • 1 tsp chia seeds
  • 1 tsp bee pollen
  • Cinnamon, ginger, and stevia- the usual

It did pretty good at taming my hunger!

About an hour after snacking I went with my mother to a doctor’s appointment. My grandmother died of breast cancer but today we found out it actually doesn’t run in our family! Apparently if you get breast cancer after the age of 50 it means it’s not genetic. This was excellent news.. my mom, sister, and I don’t have any more risk of it than anybody else!! Yay! :)

Afterwards we decided to go shopping but I was hungry! So I snacked on 1/2 of this bar from my purse:

I don’t know what half the ingredients are in this bar so it’s definitely not “clean”.. but 1/2 the bar did have 10 grams of protein and did a good job at taming my hunger!

It was funny because we went to Ross and found a few items to buy but when we went to pay we saw the line was soooo long! We looked at each other and said, “how bad do we really want this stuff?” and we decided not enough to stand in that long! So we left empty handed. LOL

And when we came home we dug into lunch! I made a big fritatta this morning for my mom and I. Basically I followed Therese’s directions but used 3-4 cups of broccoli, 1/2 bell pepper, 2 1/2 cup Egg Beaters, red pepper flakes, oregano, black pepper, and rosemary seasonings. I baked it in a 400 degree oven for 30 minutes and then cut it in half.

We each got two big portions! I topped 1/2 of the whole frittata with 1 Light Laughing Cow cheese wedge and 5 second bbq sauce.

It was so good! But lunch isn’t complete without lunch dessert right? Just some protein cookie dough- 1 serving protein powder mixed with cinnamon, 1 tbsp water, and 1 tsp peanut butter:

I forced myself to take a rest day today since I’m planning on a 90 minute workout tomorrow and I haven’t had a rest day since last Tuesday. I’m one of those people who loves to exercise so taking a rest day is really difficult! So I decided to take my dog on a 20 minute walk. When I came home I made some “pudding” by blending 1 cup water with 1/2 serving chocolate protein powder, 1 tbsp 100% cocoa powder, 1/2 tsp each guar gum and xanthan gum, cinnamon, stevia, and some ice. I also ate it with a Dark Chocolate Muffin!

I also find that the days I don’t workout I just get a strong craving to eat for no apparent reason! It’s pretty strange. I also caved and chewed some gum.. I’ve been on a gum detox and have gone two weeks without it but today I totally failed! haha. I gave up gum chewing for a few reasons.. mainly because I’m not supposed to chew it as ordered by my GI doctor and dentist! I can never only chew once piece either.. ugh! haha.

I baked a few batches of Christmas goodies this afternoon including dark chocolate chip cookies:

And dinner was my favorite combo as of late.. ground turkey and squash! Tonight’s was 4 oz lean ground turkey breast with about 2/3 cup roasted butternut squash, cayenne pepper, green chili, and cinnamon:

It was perfect!

Well I’m off to go sit on my butt all night and relax! I’m finally done with school for the semester so I can just sit back and relax all I want :D

    (3) Your panini press never fails to make me jealous…haha. That’s on my list of kitchen gadgets that I’d like to get someday. :D

    Oh, and the tortilla that I had used in the last post was from a Stop&Shop grocery store. It was the whole wheat Natures Promise wraps, but I know they’re unfortunetly not available everywhere. :-/

    Congrats on getting that exam over with! I agree, I do not believe in taking hours to finish a test, usually your first answers are the best :)

    I always eat about as much on days I workout as well as on rest days, because I’ve found that what I eat EVERDAY affects my future performance.

    Love the updates!! I have a hard time scheduling in rest days too. Mostly because there’s SO much I want to do – I can’t fit all the workouts in! I’m always starving on my rest days too, I think it’s just my body recovering :) Did you like the taste of that Think Thin bar? I tried an apricot flavoured one once and I think it’s the only bar I threw out after taking one bite :P
