Soft Cookies, Warm Ice Cream

Hi guys!

This morning I had to get up bright and early (at least earlier than usual) to take my English final. I have getting ready for early mornings down to a T thanks to 4:30 am alarms for my junior and senior year of high school while I was getting my LPN license. This morning’s breakfast featured something I haven’t made in a few months.. a breakfast cookie! I used to eat these every morning when I had to get up at the crack of dawn but now that I have time in the mornings I prefer nice big bowls of goodness :) However, breakfast cookies are delicious! Last night I mixed up all of these ingredients:

  • 1/2 cup oats, cinnamon, 1 tsp 100% cocoa powder, ginger, stevia
  • 1/2 scoop protein powder
  • 1/4 cup pure pumpkin
  • 1/4 banana
  • 1 tbsp Naturally More pb
  • 1 tsp bee pollen

My final was definitely not fun- we were given a list of topics and had to come up with a 500 word essay in two hours with proper citing, grammar, and all that junk :) I’m glad it’s over! I write pretty fast so I got out in time to go to Cardio Combo! This past summer I went to this class every Wednesday and have really missed it! Today’s was boxing.. my favorite form of cardio so I was a happy camper! After the class I did some short and sweet bicep and tricep superset circuits:

  • Bicep curl/Skull crushers- 1 set of 10 with 40lbs straight into 10 bicep curls with 30lbs; Repeated 4 times
  • Bicep pull ups/Tricep dips- 5 pull ups alternating with 10 tricep dips (40lbs of assistance); Repeated twice

My arms were kind of hurting from boxing so I kept it short and sweet! When I came home I refueled with Protein Mousse sprinkled with 1 tsp bee pollen:

Love it! However, it makes my tummy make some crazy noises.. I can only imagine what the guar gum is doing to the food and liquids in my stomach! Kind of creepy but I’m still going to use it! haha.

After snacking I headed to run a few errands which included mailing my Blogger Secret Santa gift and picking up some things from Target and the Dollar Store. When I came home I had one of my weirdest but favorite combos ever- squash and ground turkey! Last night I stuck 1/2 of a whole butternut squash in the oven and baked it until it was super soft. So today I mixed 1 cup roasted butternut squash with 4 oz lean ground turkey, cinnamon, cayenne pepper, fresh green chili, and jalapeno hot sauce:

If you were to offer me this combo a year ago I would have thought you were totally crazy. But I promise its such a delicious combination and really filling to boot!

The rest of the afternoon was spent baking more cookies and doing an 8 minute tabata workout.

I broke for an afternoon snack which was 1 cup Daisy 2% cottage cheese mixed with 1/2 cup pumpkin, 2 tsp bee pollen, 1 tsp chia seeds, cinnamon, ginger and stevia:

See what really happened was I made myself half of that portion but it was so good that I had to go back for more equaling the total I stated above. Hey- it’s good protein right?

My little cottage cheese snack attack held me over the entire afternoon and evening.. the thought of a pre-workout snack didn’t even cross my mind before the 40 minute abdominal class at the gym! It was tough as usual.. my abs and obliques were screaming by the end!

The thought of a sodium filled dinner didn’t sound appetizing at all so I kept it simple with veggies and protein. Just some steamed broccoli and 3 chicken tenderloins covered in Braggs and a spoonful of homemade salsa and jalapeno hummus:

I’m such a simple girl.. I could live off of simple meals like those!

And for my sweet tooth I had 2 Espresso Walnut Cupola Cookies that were sent to me to review:

Those little guys are only 110 calories for 10 cookies and have 5 grams of protein to boot. Which means each little cookie is only 11 calories! And they tasted delicious.. it almost melted in my mouth and there were real little walnut pieces in them. The perfect way to satisfy my sweet tooth without going overboard!

Well I guess I better get my butt into bed! My last final is early tomorrow morning and then I’m done for the semester. Woohoo!

    Those cookies sound amazing! I just went to their site and I saw smoked gouda cupola clouds. GET OUT! Smoked gouda is my all time favorite cheese. And chai pistachio?! WHOA MAMA! Anyway lol, good luck on your exams girlie! You’re gonna rock it. Oh and what’s tabata? That sounds like fun whatevr it is!

    You do eat simple little meals like that all the time. That’s why you are tiny and healthy! That and all the workouts probably have something to do with it ;)

  12. Yikes! Those are some early mornings. At least you don’t have to do that every day anymore!
