Blown Away

Hi everyone!

Last night the forecast predicted a big storm here in New Mexico and this morning I was awoken at 4:30am from the wind blowing! The weather in New Mexico is great because we get all seasons, but we also get some NASTY winds! Luckily I fell back asleep until 7:00. Then I found out we had a two hour delay which meant my first class was cancelled! So I took a quick and freezing shower (ugh!) and then crawled in bed with my mom and my laptop (she stayed home from work because the roads were too icy!) After lounging a bit I decided on breakfast… hot oats of course!

  • 1/2 cup Quaker Multigrain Hot Cereal cooked in 1 cup water + cinnamon + stevia + ginger
  • 1/2 cup egg whites
  • 1 tbsp bee pollen
  • 1 tbsp Naturally More peanut butter

So good!! I’m loving the bee pollen and peanut butter combo. It’s got me excited for breakfast! :D And the bee pollen really does seem to give me more energy and it tames my sweet tooth. I love it!

The rest of the morning was spent studying for one of my finals as well as walking on the treadmill for 35 minutes with the new issue of Oxygen Magazine. Today was my rest day so I just walked at speed 2.0- just to get the lactic acid out of my legs!

My mid morning snack was 4 oz of all natural, preservative free turkey with hummus & chipotle mustard and some steamed broccoli with Braggs:

I wasn’t hungry to begin with but I figured I needed a snack so I ate it anyway. But then it made me hungry! So I had a 100 calorie pack of almonds:

And then my tummy was happy!

Lunch was rushed today as it always is on Tuesdays so I simply stuffed an Alternative Whole Wheat Pita with 1 cup of turkey soup or sauce and 1 Light Laughing Cow cheese wedge. Then I put it on the panini press to make the bread crunchy!

It was really, really yummy! But I figured I could use a little extra fuel before my biology lab final so I had some protein pudding (1 serving chocolate protein powder mixed with a teeny bit more than 1 tbsp water, cinnamon, and 1 tsp Smuckers Organic PB):

And then I was off to my final! I thought it was easier than the midterm (thank gosh) but it was still pretty tough. I don’t find out how I did until Monday.. but I’m pretty sure I passed! (Or at least I’m praying, haha.)

I finished the final early and was able to come home for a little bit. I took this extra time to prepare for tomorrows math exam and to put some laundry away! I figured I could use a little snack before leaving for my last class of the day so I took the idea from Jenny and microwaved 1/4 cup Unsweetened Almond Dream with 1 crumbled Spiced Carrot Muffin, cinnamon, and stevia:

Yes I’m totally aware that is not a pretty picture.. but it tasted good!

Biology was pretty laid back today as we were just reviewing. I didn’t have much of an appetite when I came home so I went with something light: a big bowl of homemade veggie stew (just chicken broth + veggies) 4 oz of chicken breast, and extra red pepper flakes:

These stews are so easy and simple to make. And it doesn’t take much effort either!

Are you all ready for Christmas? I’m getting pretty excited! Currently “A Charlie Brown Christmas” is on and it’s definitely putting me in the Christmas Spirit! :D

Well I’m off to do who knows what! Probably blog reading and lounging around. See ya!

    Hehe, i just listened to a Christmas carol on the radio, so I’m in the Christmas mood too :) Ahhh, I can’t wait until finals are over! Yaaay for you being done with one and passing it!

  5. With this crazy weather, I’m finally starting to feel more in the Christmas spirit. My family didn’t put up the Christmas tree yet, but as soon as we do, that will really make it a reality. :)

    Bet it feels good to have that exam behind you! I’m sure you did great!

    I love your simple stew! Great idea for a healthy, warm dinner.

    I am loving those little “protein powder” mixes that you make with water and cinnamon! That is such a good idea, and pretty much is just like eating frosting!
