Dark Chocolate Muffins

Makes 9 muffins @ 80 calories, 8 net carbs, and 8 grams of protein each
Liquid Ingredients:
- 3/4 cup unsweetened chocolate Almond Breeze
- 1/2 cup liquid egg whites or egg substitute
- 1/2 cup pure pumpkin (you don’t taste the pumpkin)
- 2 tbsp Wholesome Sweeteners sucanatĀ (you could use brown sugar)
- 3 tbsp pure stevia
- 1 tsp vanilla
Dry ingredients:
- 1/2 cup soy protein powder
- 1/2 cup wheat bran
- 1/2 cup whole wheat flour
- 1/3 cup 100% cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
Directions:
- Preheat oven to 375. Spray a muffin tin with nonstick baking spray, set aside.
- Mix liquid ingredients.
- Stir in dry ingredients, mix well.
- Pour into muffin tin, bake for 20 minutes or until toothpick comes out clean.

**Note: I use a variety of flours and protein powders to up the protein content but you could easily use one type of flour!
**Cranberry Chocolate Variation: Make the batter as shown above but add in 1 cup of fresh cranberries right before you pour the batter into the muffin tin.

Hi April! Just made these last night and they were amazing! I was just wondering what the macros were of the soy protein powder used. I used 100% pure unsweetened WPI and would like to adjust my macros accordingly

Hi Suzanne! The soy flour I used was 100 calories, 20 grams of protein, and no carbs per 1/4 cup!
