Dark Chocolate Muffins

Dark Chocolate Muffins

Makes 9 muffins @ 80 calories, 8 net carbs, and 8 grams of protein each

Liquid Ingredients:

  • 3/4 cup unsweetened chocolate Almond Breeze
  • 1/2 cup liquid egg whites or egg substitute
  • 1/2 cup pure pumpkin (you don’t taste the pumpkin)
  • 2 tbsp Wholesome Sweeteners sucanatĀ (you could use brown sugar)
  • 3 tbsp pure stevia
  • 1 tsp vanilla

Dry ingredients:

  • 1/2 cup soy protein powder
  • 1/2 cup wheat bran
  • 1/2 cup whole wheat flour
  • 1/3 cup 100% cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 375. Spray a muffin tin with nonstick baking spray, set aside.
  2. Mix liquid ingredients.
  3. Stir in dry ingredients, mix well.
  4. Pour into muffin tin, bake for 20 minutes or until toothpick comes out clean.

**Note: I use a variety of flours and protein powders to up the protein content but you could easily use one type of flour!

**Cranberry Chocolate Variation: Make the batter as shown above but add in 1 cup of fresh cranberries right before you pour the batter into the muffin tin.

    Hi April! Just made these last night and they were amazing! I was just wondering what the macros were of the soy protein powder used. I used 100% pure unsweetened WPI and would like to adjust my macros accordingly :)

    Hi Suzanne! The soy flour I used was 100 calories, 20 grams of protein, and no carbs per 1/4 cup! :)
