Pumpkin Spice Protein Pancakes

Makes 1 serving at 280 calories, 30 grams of protein, 22 net carbs

Ingredients:

  • 1/2 cup Nancy’s lowfat cottage cheese
  • 1/2 cup liquid egg whites
  • 1/3 cup oats
  • 1/2 cup pure pumpkin
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ginger, baking powder, and baking soda
  • Stevia to taste (I used 5 drops of NuNaturals Liquid Stevia)

Directions:

  1. Preheat a skillet or griddler (I used my Cusinart Griddler) to medium-high heat. (I set mine at 400 degrees.)
  2. Blend all ingredients using either a food processor, blender, or stick-blender.
  3. Pour pancakes onto skillet or griddler. Let cook for about 4-5 minutes, or until bubbles start to form.
  4. Flip pancakes and cook for another 2 minutes.
  5. Top pancakes with whatever you like! I topped mine with 1 tbsp of almond butter.
