Pumpkin Spice Protein Pancakes
Makes 1 serving at 280 calories, 30 grams of protein, 22 net carbs
(Stats for pancakes without toppings)

Ingredients:
- 1/2 cup Nancy’s lowfat cottage cheese
- 1/2 cup liquid egg whites
- 1/3 cup oats
- 1/2 cup pure pumpkin
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ginger, baking powder, and baking soda
- Stevia to taste (I used 5 drops of NuNaturals Liquid Stevia)
Directions:
- Preheat a skillet or griddler (I used my Cusinart Griddler) to medium-high heat. (I set mine at 400 degrees.)
- Blend all ingredients using either a food processor, blender, or stick-blender.
- Pour pancakes onto skillet or griddler. Let cook for about 4-5 minutes, or until bubbles start to form.
- Flip pancakes and cook for another 2 minutes.
- Top pancakes with whatever you like! I topped mine with 1 tbsp of almond butter.
