A Four Course Meal

Hey guys!

Last night my surprisingly light dinner made me SO STUFFED and I didn’t need any night time snacks. However, this morning once all the fiber passed through I was hungry! Luckily I have another peanut butter lover in the house (hi mama!) so I had a jar to use for my oats today. Normally I make sure there’s about 2 tbsp in it but today there was slightly less.. maybe 1 1/2 tbsp? In the oats were:

  • 1/2 cup Quaker Multigrain Hot Cereal cooked in 1 1/4 cup water
  • 1/2 small ripe banana
  • 1/4 cup pure pumpkin
  • 1/2 serving chocolate fudge whey protein powder
  • Cinnamon, ginger, stevia
  • 1 tsp Nativa’s Naturals Sweetened Raw Cacoa Nibs

Yum! Nativa’s Naturals sent me the raw cacao nibs a while back and I hadn’t tried them until today! They tasted very dark chocolatey.. I liked them but they are definitely not that sweet!

My oats held me over a total of 5 hours.. and through a tough workout! I went to my usual Cardio Kickboxing today where it was arm focused.. boxing with weights kills! My arms were pretty tired but after the class I proceeded to tire out my arms and abs even more:

  • Bicep curl into overhead press- 18 reps with thirty pounds (total)
  • Tricep extension- 20 reps with 22.5 lbs
  • Crunches on a decline bench with a 10 lb weight- 3 sets of 10 with extra pulses
  • Russian twists on a decline bench with a 10lb weight- 3 sets of 10
  • Reverse crunches- 3 sets of 10 (I think there was more..can’t remember!)

By the time I was done I was quite tired and hungry! While lunch was cooking I snacked on a whole beet.. times this picture by 3!

And lunch was pretty random.. I cooked 1/2 cup of defrosted salad shrimp along with 1/2 a bell pepper and once it was done I added 3/4 cup Egg Beaters, fresh green chili, spinach, 1 Light Laughing Cow cheese wedge, and chipotle mustard:

But I was still quite hungry so I had 1/2 cup Nancy’s Lowfat Cottage Cheese blended with 1/4 cup pure pumpkin, vanilla, cinnamon, ginger, and stevia. Then I added 1/4 cup puffed millet cereal and a about a teaspoon of Better’N'PB:

Plus a Pumpin’ Pumpkin Cookie with unsweetened apple butter:

And then my mom and I went shopping at Whole Foods and the Vitamin Cottage. The Vitamin Cottage is one of my favorite places.. I buy all my baking ingredients in bulk there! Although a lot of my recipes sound like they use expensive ingredients they are actually EXREMELY cheap:

58 cents for a pound.. can’t beat it!

When I got home I snacked on protein cookie dough while dinner was cooking (1 serving of chocolate protein powder mixed with 1 tbsp water + 1 tsp crunchy peanut butter):

And dinner was inspired by the lovely Experimentarian herself! As a fellow cottage cheese lover she gave me some of her favorite concoctions.. which lead to my mock tuna noodle dinner:

  • 1 5oz can of albacore tuna mixed with 1/4 cup lowfat cottage cheese, minced garlic, and pepper
  • 1 1/2 cup roasted spaghetti squash
  • Steamed Broccoli
  • Braggs Amino Acids, tons of red pepper flakes

That girls a genius.. I will be making this again! It had a ton of my favorites:

  1. Tons of veggies (and two of my favorite veggies I might add- broccoli and squash)
  2. Extremely high in protein (close to 50 grams!)
  3. Super spicy from the red pepper flakes
  4. Extremely filling!

Yum!

Well I’m off to be a lazy butt and watch TV! See you tomorrow!

  2. i found my first spaghetti squash yesterday and i am so making it tonight ;) and i was so surprised to see some more of that squash here! hihi

  3. I just love how you snack on beets! They always look SO good. I seriously need to try making them sometime.

    What a great dinner idea! Cottage cheese really is such a versatile food, but I’ve never thought of anything like a mock tuna noodle dish. It’s so fun to experiment with new mixes!
