Hi friends!
This morning I didn’t wake up as hungry as usual so I pondered around the kitchen for a while trying to figure out what I wanted. Cereal? No I never eat cereal; Pancakes? No not enough time; Oatmeal? Nah I want something different! I finally came up with something I’ve never had before.. a breakfast pita! Inside an Alternative Whole Wheat Pita Bread I put:
- 1/2 cup fat free cottage cheese mixed with NuNaturals Vanilla Stevia + cinnamon + ginger
- 1/4 cup fresh blackberries
- 1 tbsp walnuts (I toasted them for 15 seconds- we keep ours in the freezer!)
Then I microwaved it for 10 seconds:


It was SOOOO GOOD!! I may have found another breakfast/ snack obsession.. holy yum!!
However my stomach finally decided to let me know it was hungry so I followed up my pita with 1/4 cup microwaved egg whites and hot sauce:

It was a yummy breakfast indeed!
After breakfast I headed to Psychology where I took an exam. It only took me about 15 minutes.. I’m a super fast test taker! Since I got out so early I decided I’d hit up the gym. There was a class called “Muscle Hour” that I decided I’d try out. It was kind of fun.. but we used light weights so it wasn’t that hard for me! So after 45 minutes I left the class early and did a little bicep and tricep supersets:
- Bicep curls/Tricep kickbacks (each 10 reps with two 15 lb dumbbells)
- Repeat two more times
- Skull crushers (10 reps with 40lbs)/ Hammer curls (10 reps with two 12.5 dumbbells)
- Repeat two more times
- Chins/pull ups- 2 sets of 10, 1 set of 5 with 40lbs of assistance
And then I had to cut it short because I had to head back to class! I quickly drove home and made a super quick post-workout snack:
- 1 serving chocolate fudge whey protein powder
- 1/2 cup Unsweetened Almond milk + 1/2 cup water
- 1/4 cup pumpkin
- Ice, stevia, cinnamon
I recently bought a stick blender off of ebay for like 20 bucks and I tried it out today.. it made my smoothie in like 2 seconds!
I brought the drink to class.. I can only imagine what my classmates thought!
Lunch was a stir fry mixture.. again. Today’s had:
- 4 oz chicken tenderloins, boiled
- 1 summer squash
- 1/2 green bell pepper
- 1 tbsp fresh Parmesan cheese
- A blob of hummus, homemade salsa, cayenne pepper, red pepper flakes, black pepper, and Braggs Amino Acids!

Followed by lunch dessert.. a Pumpin Pumpkin Cookie with 1/2 tsp almond butter:

Later on in the day I did 30 minutes of light cardio followed by a snack! I realized I hadn’t really eaten any fruit all day so I had 2/3 cup 0% Fage mixed with 1/2 serving chocolate protein powder, cinnamon, 1/2 banana, and 1 tbsp PB2:

I was pretty excited after biology when it came time for dinner.. the other April reminded me today that I haven’t had one of my favorite food combos.. a sweet potato with peanut butter! So naturally I had to have one tonight. I topped the sweet potato with 2 tsp Costco Organic PB, cinnamon, and ginger. On the side I had some tilapia with lemon pepper, cayenne pepper, and chipotle mustard:

Mmm.. my favorite dinner of the week for sure! Well I should probably go finish up some stuff before it’s time for bed! Although those dang pumpkin cookies are just staring at me.. I may have to have another! hehe
** Update: I ended up eating 3 cookies! At least it was only a total of 135 calories.. so I don’t feel bad

Hehe, one time I brought a green smoothie (in one of those Amazing Grass shakers!) to school and drank it in the lab. People might have thought you were drinking chocolate milk. Who knows what people that I was drinking

What a neat way to switch up your breakfast. I have to admit that I don’t think I’ve ever had a pita for breakfast before!

i love putting pumpkin in my protein smoothies! I also love cinnamon roll PP, its made by BSN…take a scoop of that with some ice, almond milk and pumpkin and it is OUT OF THIS WORLD!!

Just an FYI — If anyone is interested in purchasing the stick blender – it is so much easier to clean up after than using the regular blender. Oh Guess what I get to snack on all day……………….pumpkin cookies….:) Oh and April is planning a trip to Vitamin Cottage this weekend with me, as she says she is running out of goodies. Lets see what is in store for next week. : )
