Pumpin’ Pumpkin Cookies
Makes 24 cookies @ 45 calories, 4 grams of protein, and 5 net carbs each

Ingredients:
- 1/2 cup egg substitute or egg whites
- 1 cup pure pumpkin
- 1 jar of baby food pureed prunes
- 2/3 cup NuNaturals Stevia Baking Blend
- 1/2 cup whole wheat white flour
- 1/2 cup wheatbran
- 1/2 cup soy protein powder
- 1/2 cup soy flour
- 1 tsp pure vanilla extract, ginger, baking powder, and baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
Directions:
- Preheat oven to 300 degrees.
- Mix the egg substitute, pumpkin, stevia, and prunes well.
- Add in the rest of the ingredients and mix until combined.
- Drop by rounded spoonfuls on to an ungreased cooke sheet. Use the back a fork to flatten the balls if you prefer flatter cookies.
- Bake for 20 minutes.
Enjoy!
**Note: These would be excellent with raisins or nuts!

Question, have you found that the baking blend of stevia is different than the regular!?

The baking blend is more sugar-like, so you use similar to the same amount of sugar the recipe calls for, but pure stevia works just as well!
