Pumpin’ Pumpkin Cookies

Pumpin’ Pumpkin Cookies

Makes 24 cookies @ 45 calories, 4 grams of protein, and 5 net carbs each

Ingredients:

Directions:

  1. Preheat oven to 300 degrees.
  2. Mix the egg substitute, pumpkin, stevia, and prunes well.
  3. Add in the rest of the ingredients and mix until combined.
  4. Drop by rounded spoonfuls on to an ungreased cooke sheet. Use the back a fork to flatten the balls if you prefer flatter cookies.
  5. Bake for 20 minutes.

Enjoy!

**Note: These would be excellent with raisins or nuts!

    Question, have you found that the baking blend of stevia is different than the regular!?

    The baking blend is more sugar-like, so you use similar to the same amount of sugar the recipe calls for, but pure stevia works just as well!
