An Ancient View

Happy Birthday to my daddy!

This morning I skipped the Tabata class in order to go hiking with my dad! We went to the Petroglyphs which are located up in the mountain area and has volcanoes and archaeological sites with carved images in the rocks. It was a 2.5 mile hike.. and I took some pictures for your viewing pleasure!

It was a nice little way to get exercise in and spend time with my dad on his birthday! But backing up to breakfast..

I woke up starving! So I went with oats naturally. Today’s was a little extra special:

  • 1/3 cup oatbran cooked in 1 1/2 cup water + cinnamon + ginger + stevia
  • 1/2 ripe banana
  • 1/2 scoop vanilla protein powder
  • 1/2 cup roasted ambercup squash**
  • 1 tbsp Costco Organic PB

The squash is what made it extra special! I was originally planning on having pumpkin like usual, but I saw a container of roasted squash and said what the heck- I’ll try it! And it was really delicious!

After breakfast we went on the hike. When I came home I wanted a little extra cardio boost so I did a 20 minute cardio interval workout from the Abs Diet For Women DVD plus about 5 minutes of pilates. Then I had my first mini-meal: 3 oz fresh and natural deli turkey with hot sauce and spicy mustard, steamed broccoli with braggs, and some roasted beets:

Then I headed to Smith’s and Sam’s club with my dad for a few groceries. When I came home I was a starvin’ marvin! So I started with 1/2 cup Daisy 2% cottage cheese mixed with NuNaturals Vanilla Stevia and 1/2 cup blueberries. I put some of that mixture along with 1 tbsp PB2 mixed with sf maple syrup on 2 slices of Alpine Valley Multigrain Bread:

And I had the rest of the cottage cheese mixture on the side:

But I was still super hungry so I had protein cookie dough (1 scoop vanilla protein powder mixed with 1 tbsp water + 2 tsp crunchy pb):

And then finally I was full! After my second mini-meal I went to the doctor to get a flu shot. I know a lot of people don’t believe in flu shots.. but I’m a nurse and I think it’s important! I respect other people’s decisions but I get mine every year. After the doctor’s office I ran a few more errands and ended up spending more money on food than I was expecting! Oops :D

When dinner time rolled around my dad and sister wanted to get Subway since he had a gift card. I decided to tag along and I got a salad to take home. I ordered it with:

  • Lettuce
  • Spinach
  • Bell peppers
  • Pickles
  • Yellow peppers
  • Green chili
  • Cucumbers

And when I got home I added:

  • 2 oz leftover salmon
  • 2 tbsp dried edamame
  • 1 tbsp fresh Parmesan cheese

And once I finished with that I had butternut squash fries! I made them the usual way- cut up a butternut squash, spray it with Pam, sprinkle with cinnamon, cayenne, and black pepper, and bake for 1 hour at 400 degrees flipping halfway. I ate them with natural ketchup of course!
