Snack Tortillas

Snack Tortillas

Makes 13 tortillas @ 70 cals, 6 carbs, and 7 grams of protein each

Ingredients:

  • 1 1/4 cup whole wheat white flour
  • 3/4 cup wheat bran
  • 3/4 cup soy protein powder
  • 1 tbsp pure pumpkin
  • 1 1/2 tsp Ener-G Egg Replacer (mixed with 1 tbsp water)
  • 1 tsp baking powder
  • 1 1/4 cup warm water

Directions:

  1. Preheat a cast-iron hot plate or skillet to medium-high heat.
  2. Mix all of the ingredients together, excluding the water.
  3. Once all of the flours are mixed, very slowly add in the water, mixing, a little at a time.
  4. Add a pinch of flour on top (to make the dough less sticky to handle) and form into 13 little balls.

5.  Sprinkle some more flour on a cutting board, and roll the dough out with a rolling pin. Roll it out very thin.

6. Place the rolled out dough on the preheated skillet or cast-iron hot plate.

7. Once bubbles start to form, flip with a fork and cook for an additional minute.

8. Continue with remaining dough-balls until you have 13 little tortillas!

Top with whatever you like..peanut butter, beans, salsa, hummus, or cottage cheese like me!

  1. Such a neat recipe April! I can’t say I’ve ever made my own tortillas before, but sounds like a healthy alternative to many of the “un-clean” ones out there!

    This looks pretty easy….where do you buy egg replacer? Just at the grocery store? I love my tortillas but they are most definitely not clean and have a ton of sodium…
