Best-Ever Banana Bread

Makes 8 servings @ 115 cals, 20 carbs, and 7 grams of protein each

Ingredients:

  • 1 cup whole-wheat white flour
  • 1/4 cup soy protein powder
  • 1/4 cup wheat bran
  • 2 ripe, mashed bananas
  • 1/2 cup egg substitute or egg whites
  • 1/2 cup no sugar added applesauce
  • 1/4 cup NuStevia Baking Blend
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 350 degrees. Spray a 5 x 9  (or any loaf pan) with nonstick baking spray.
  2. Mix the egg substitute, applesauce, stevia (or sweetener of your choice), and mashed bananas.
  3. Add remaining ingredients; Mix well.
  4. Pour the mixture into the loaf pan.
  5. Bake for about 40 minutes, or until a knife inserted into the middle comes out clean.
