Cocoa Pumpkin Bars

Makes 18 bars @ 65 calories, 7 carbs, and 6 grams of protein per bar

Dry Ingredients:

  • 1 1/4 cup Whole Wheat White Flour
  • 1 cup wheat bran
  • 1/2 cup soy protein powder
  • 1/2 cup stevia
  • 2 tbsp 100% cocoa powder
  • 1 tsp baking powder and baking soda
  • 1 tbsp cinnamon

Liquid Ingredients:

  • 1 cup liquid egg substitute
  • 1 3/4 cup pure pumpkin
  • 1/2 cup + 2 tbsp Unsweetened Almond Milk
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray 2 8×8 pans with cooking spray, set aside.
  3. Combine dry ingredients until just combined.
  4. Add in liquid ingredients, stir well
  5. Spread mixture into the 2 pans.
  6. Bake for about 30 minutes or until a toothpick comes out clean.

** For winter squash bars simply substitute any type of pureed or mashed winter squash (ambercut, butternut, kabocha) in place of the pumpkin!

    These look really good! Is there something I can sub for wheat bran? I’m not opposed to it or anything… just don’t have it on hand and probably wouldn’t use it enough to buy a whole bag/box. Isn’t it sort of like oatmeal or something?
