I Can’t Follow a Recipe

Hi guys!

I woke up hungry this morning! So naturally I opted for oats. Todays mix contained:

  • 1/2 cup oats cooked in 1 cup water + cinnamon + ginger
  • 1/2 cup pure pumpkin
  • 1/2 cup liquid egg whites (tempered in at the end of cooking)
  • 1 tsp sugar free syrup
  • 1 tbsp PB2

It was so voluminous! I recorded a video this morning of how to make egg white oatmeal..check it out!

After breakfast I headed to Psychology where I took an exam. It only took me 20 minutes.. I’m a really fast test taker! So I got to come home early which was nice. I got some studying done while walking on the treadmill as well as doing some things around the house. Before I left for school again I had a snack of 1/2 cup Daisy 2% cottage cheese blended with vanilla, stevia, cinnamon, and ginger in the food processor and topped it with 1/2 cup defrosted blueberries and 1/4 cup Kashi Go Lean:

I’m telling you.. if the texture of cottage cheese freaks you out you have got to blend it! It turns into a yogurt-like texture:

Delicious! I wasn’t exactly hungry at that point but I was feeling weak and low on energy..which is a sign to eat! I felt much better after snacking.

Afterwards I headed to Philosophy and then came home to a quick lunch. I made a peanut butter sandwich that contained 2 slices of Alpine Valley Multigrain Bread- one slice spread with 1 tbsp Krema Natural Peanut Butter and cinnamon, and one slice spread with 2 tsp park skim ricotta and 1 tsp all natural cherry preserves:

Plus 1/2 cup Fage with cinnamon and an apple:

And I chugged a packet of Amazing Grass Wheatgrass mixed with water:

ICK! This was not my favorite product by Amazing Grass. I could barely get it down!

After lunch I headed to my biology lab and then biology. I snacked on 1/4 cup dried edamame during biology:

And dinner was already prepared for me when I got home! I made a recipe on Sunday night based off this recipe, but I pretty much changed everything. Basically I brushed 4 frozen chicken breasts with a mixture of 2 tbsp water, 1 tsp brown sugar, 2 tsp chili pepper, 1 tsp cumin, 1 tsp dried oregano, and a pinch of salt. Then I chopped up a butternut squash and layered the squash on top of the chicken. Then I poured the rest of the spice mixture over the squash, and baked everything in a casserole dish for about 1 hour. I then added 1/4 cup walnuts and baked for another 10 minutes. It made two portions:

And I had 1/2 of it for dinner tonight:

Total protein= 95 grams.

Today’s workout consisted of 7000 steps.. I didn’t have time for a formal workout!

Well I’ve got some more studying to do.. it’s a busy school week!

    I love ricotta with jam! A lot of Italians have it for dessert, instead of in a savory dish and I can see why!

    I wish i could eat cottage cheese :( its the one dairy i really miss.. but dairy makes me tres sick.

    wheatgrass definatly doesnt have a rad taste. I usually buy the frozen ones, and take them like shots.. just quick and easy, and super healthy!!

  6. I completely agree that the Amazing Grass Wheatgrass is not their best product. It’s a bit better mixed in a smoothie, but it seems to have a sort of icky taste to it that’s not in the other Superfood products. I’ve noticed too that it doesn’t seem to mix as well as the others.

    Augh, I really wish I could study and walk on my treadmill at the same time. I think I must just walk too quickly or something, because I can never seem to concentrate well enough and really read much of anything. I usually end up flipping through magazines instead. I also find it hard to find a spot to hold up any papers on the treadmill. How do you do it???

    I’ve had an Amazing Grass Wheat Grass sample staring at me for weeks now and I can’t get up the courage to try it. I think their Amazing Meal tastes pretty grassy so I can’t imagine the straight Wheat Grass…

    Your blueberry/cottage cheese mix looks kind of like mine! I actually like the blueberries still frozen. Something about the texture…
