Now that fall is here pumpkin is in the air! Today I came up with some pumpkin muffins.. they have awesome nutritional stats!
Lean & Mean Pumpkin Muffins
Makes 8 muffins @ 100 calories, 7 grams of protein, and 12 carbohydrates each

Dry Ingredients:
- 1/2 cup soy flour
- 1/4 cup protein powder
- 1/4 cup wheat bran
- 1/4 cup whole wheat flour
- 1/4 cup Wholesome Sweeteners SucanatĀ (any sugar will do)
- 1 tbsp cinnamon
- 1/2 tbsp ginger
- 2 tsp baking powder
- 1 tsp baking soda
Wet Ingredients:
- 3/4 cup pure pumpkin
- 1/3 cup egg whites
- 1/2 cup applesauce
Directions:
- Preheat oven to 350 degrees.
- Spray a muffin tin with nonstick cooking spray, set aside.
- Combine all of the dry ingredients and mix well.
- Stir in the wet ingredients until combined.
- Pour into the sprayed muffin tins and bake for 20 minutes, or until a toothpick comes out clean. They are very moist muffins but as long as the toothpick comes out clean they are done!

Oooh this recipe looks so good! I must try this soon. Think I’ll have to substitute a few things – like soy flour. Just reading it through again I think I have the rest of the ingredients actually! Sounds like something for a sunday morning!

these look amazing! do you think they would work with all wholewheat flour or part oats? I don’t have soy flour or wheat bran!
