Lean & Mean Pumpkin Muffins

Now that fall is here pumpkin is in the air! Today I came up with some pumpkin muffins.. they have awesome nutritional stats!

Lean & Mean Pumpkin Muffins

Makes 8 muffins @ 100 calories, 7 grams of protein, and 12 carbohydrates each

Dry Ingredients:

  • 1/2 cup soy flour
  • 1/4 cup protein powder
  • 1/4 cup wheat bran
  • 1/4 cup whole wheat flour
  • 1/4 cup Wholesome Sweeteners SucanatĀ (any sugar will do)
  • 1 tbsp cinnamon
  • 1/2 tbsp ginger
  • 2 tsp baking powder
  • 1 tsp baking soda

Wet Ingredients:

  • 3/4 cup pure pumpkin
  • 1/3 cup egg whites
  • 1/2 cup applesauce

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a muffin tin with nonstick cooking spray, set aside.
  3. Combine all of the dry ingredients and mix well.
  4. Stir in the wet ingredients until combined.
  5. Pour into the sprayed muffin tins and bake for 20 minutes, or until a toothpick comes out clean. They are very moist muffins but as long as the toothpick comes out clean they are done!

    Oooh this recipe looks so good! I must try this soon. Think I’ll have to substitute a few things – like soy flour. Just reading it through again I think I have the rest of the ingredients actually! Sounds like something for a sunday morning!
