A Work in Progress

Happy Monday! I’m still trying to figure out word-press so bear with me. I started out the day with breakfast number one (or pre-workout snack) which was a banana with peanut butter and granola.

Then I was off to an interval class at the gym- it was tough today! Tons of skull crushers, lunges, squats, bicep curls, overhead presses, and step-aerobics to name a few. I came home and ate a pumpkin protein concoction that I made last night. It consisted of: 

  • 1/2 cup oats
  • 1/4 cup pumpkin
  • 1/2 cup water
  • 1/2 scoop vanilla protein powder
  • vanilla, cinnamon, ginger
  • 1 tsp peanut butter.

It wasn’t as good as I expected but was a nice post-workout breakfast/snack! I don’t like to eat two breakfasts very much but I have found it is the only way to get the right amount of fuel when I take early-morning classes at the gym.

I spent the rest of the morning reading blogs and cooking. For lunch I had a salad with spinach, cucumber, half of an avocado, green chili, and cornmeal-tofu that I made the other day from this cookbook:IMG_1766

The cookbook is not mine but I actually checked it out from the library! how cool is that? Oh, and I added salsa to my salad after the picture was taken. Salsa is actually my first choice when it comes to salad dressing! Chili is pretty popular here in New Mexico.

I also had half a cup of Fage yogurt with some strawberries and  a tablespoon of granola.

I spent the rest of the afternoon going to stores and to see I Love you Man. It was cute!! I ate this bar before the movie:

It was pretty good!! It must have gotten my metabolism going because I was starving after the movie. For dinner I had a black bean burger from Veganomicon on a piece of whole wheat bread with avocado and hummus. I had steamed broccoli on the side. IMG_1777

I was still hungry after this so I had dessert- a piece of whole wheat bread with a tsp of peanut butter and half a tsp of honey. Well my first post is complete! see you tomorrow!

    Great looking blog dear!! As for the smoothie- I use 4 ice cubes, frozen spinach and frozen banana- i think the frozen ingredients add to thickness as well!

    I really like it! I’ve only made two recipes from it so far but they are both very good. I’m glad I checked it out from the library first before I bought it because it is so expensive in stores!

  6. Mmm…I love your oatmeal concoction. Sounds yummy! :D

    I borrowed Veganomicon from the library too, but ended up loving it too much and bought it a couple weeks later. haha… :D My favorite recipe so far from there is the roasted brussell sprouts (simple and wonderful) and the quinoa pineapple-cashew stir fry (can’t remember the name, but it goes something like that…and is very, very tasty!)
